Alison's Hummus

I didn't use to like hummus but then I tried this recipe and tweaked it over time. Now it's perfect. Enough said. Don't skip roasting the garlic or you will be sleeping alone tonight! I make my own tahini by blending sesame seeds and a little olive oil in the food processor forever, then keeping it in a jar in the fridge. Also, I buy a whole bag of peeled garlic cloves from Costco, roast them in the oven (sprayed with a little oil) for about 15 minutes until golden brown, and then put the whole batch in the freezer. Then anytime I want to make hummus I just put the frozen cloves in the food processor and voila. -- posted by hotdishmama
